Leftover Challah Ideas

Here's are two ideas for what to do with leftover challah:

Challah French toast! Baking is a lower fat alternative to frying.

  1. Slice the remaining challah and lay the slices in a buttered or oiled baking pan.
  2. Make a mixture of eggs, milk, vanilla, cinnamon, and a bit of sugar, and pour this mix over the challah slices.
  3. Cover this and place in refrigerator until morning. Bake at 325’ until done - - about 25-30 minutes, depending on the amount of bread you have in the pan.

Challah Pudding with Fruits

Preheat oven to 375’F

Grease a 10-inch square or oval baking dish Ingredients:

  • 8 Tablesp butter or margarine, softened
  • 1 ¼ lb challah, thickly sliced and lightly toasted.
  • 3 C milk
  • 1 C dried cherries

  • 4 eggs, lightly beaten
  • 3 firm, ripe pears

  • ½ teasp vanilla extract
  • 1 ¼ C demerara (raw) sugar

  • ½ teasp almond extract
  • 1 C flaked, sliced almonds

  • ¼ teasp salt

    OPTIONAL:

  • raisins
  • whipped cream
DIRECTIONS
  1. Mix together milk, eggs, vanilla, almond and salt.
  2. Spread the challah toast with softened butter or margarine - - reserve 3 tablespoons. Cut challah into bite-sized chunks.
  3. Add buttered challah and dried cherries to the milk mixture and fold in gently so that all of the bread is coated with the liquid.
  4. Core and dice the pears, but do not peel. Layer the bread, sugar, almonds and pears in the dish, ending with a layer of sugar. Dot with butter.
  5. Bake for 40 or 50 minutes or until caramelized. Serve with a spoonful of whipped cream.
  6. VARIATIONS

    1. Apple Version - - Replace the almond extract with another teaspoon of vanilla. Add a heavy sprinkle of cinnamon to the milk. Use raisins or sultanas instead of dried cherries, walnuts in place of almonds, and apples instead of pears.
    2. Savoury Version - - Omit vanilla and almond extracts, fruits and nuts. Instead, fold small chunks of cheese in with the milk, eggs and salt. Browned onion bits or rings mixes in well with the cheese.
